Potato pancakes are the perfect recipe for leftover mashed potatoes especially for Thanksgiving Day leftovers.

Ingredients:
2 tbsp Olive Oil
4 cups Mashed Potatoes
1 Egg, beaten
2 tbsp Fresh Chives (Optional)
Directions:
In a large bowl add the mashed potatoes, egg and fresh chives; stir to combine well. Place a pan over medium high heat and drizzle in olive oil. Form potatoes into pancake size (about 3 inch in diameter) and place in the pan and cook 3 minutes on first side, flip and cook for an additional 3 minutes or until golden brown. Remove from heat and continue to cook the remaining potato pancakes until the potato mixture is gone. Enjoy with ketchup, applesauce or a remoulade sauce.
