Pita nachos are a healthier choice that the kids can enjoy as an after school snack. These nachos can also be as dressed up as much as you’d like them to be, which makes for a great entertaining appetizer as well.

Broil: 4 minutes
Ingredients:
2 Pita Rounds, cut into triangles and torn in half
1/2 cup Salsa
3/4 cup Shredded Cheese
2 Scallions, chopped
Optional Ingredients:
Jalapeños
Black Beans
Ground Beef, Chicken or Pork
Sour Cream
Directions:
Preheat broiler to high.
Place the pita triangles onto a baking sheet and place under the broiler for 30 seconds. Then rotate the baking sheet and place back into the broiler for another 30 seconds or until the chips become lightly browned and crisp.
Take the pita chips out of the oven and top them with the salsa, cheese and any other ingredient you like on your nachos. Place back under the broiler until cheese has melted, about 30-45 seconds.
Top with scallions and/or sour cream then serve and enjoy!
*Tip: Bake the pita chips the night before and place them in a storage bag. This will allow for the kids to safely make their own nachos and melt the cheese in the microwave.
