Lasagna served in individual pieces is a fun dish to serve on a weeknight. This recipe is a traditional cheese lasagna, but feel to add meat, vegetables or even tofu to make it your own.

Ingredients:
8 Lasagna Noodles
8 oz Ricotta Cheese
4 oz Mozzarella Cheese, shredded
3 oz Parmesan Cheese, shredded; plus more before serving
1 Egg, beaten
1 tsp Salt
1 tsp Pepper
2 tbsp Basil, chopped (about 3-4 leaves)
3 cups Marinara Sauce, divided
Directions:
Preheat oven to 375 degrees.
Cook lasagna noodles according to package directions. While lasagna is cooking, in a bowl combine ricotta cheese, mozzarella, parmesan, egg, salt, pepper and basil.
Once lasagna noodles have cooked place the noodles out onto a board and evenly spread the cheese filling mixture over each noodle. Then evenly spread over 3/4 cup of marinara sauce on top of the cheese mixture and roll up the lasagna noodles.
On the bottom of a 2 quart baking dish add 1/4 cup of marinara sauce and place the rolled up lasagna noodles in the dish. Pour the remaining marinara sauce over the top of the lasagna rolls and place in the oven for 25 minutes.
Take baking dish out of the oven and let sit for 10 minutes then shred parmesan cheese over the top, serve and enjoy.
