AMATEUR KITCHEN
This is the best grilled cheese sandwich you'll ever have and it is easy to make.
Serves 4:
Ingredients:
4 slices of Swiss cheese
4 slices of Gruyere cheese
4 slices of Manchego cheese
8 slices of heirloom tomatoes (or roma tomatoes)
1 bunch of watercress
2 tbls of red wine vinegar
1/3 cup of EVOO
Salt and Pepper
1 loaf of ciabatta bread
Butter
Directions:
Slice up the cheeses and tomatoes. Then in a bowl mix together the red wine vinegar, EVOO, salt and pepper and after well mixed toss in the watercress. Slice up the ciabatta bread and assemble the grilled cheese. (Hint: Have cheese on both ends of the bread so the sandwich sticks together.) After assembled spread butter on the outside of bread. Preheat a grill pan or Panini press on medium then place the sandwich on the pan and weigh it down if not in a Panini press. Cook on both sides until golden brown. Serve and Enjoy!
On the side:
Sweet potato chips: Peel then wrap 2 sweet potatoes in aluminum foil and place in oven on 400° for 15-20 minutes until slightly tender. Unwrap and slice the potatoes into chip-like slices. Dress with 2 tbls of EVOO and salt and pepper. Place back in oven until desired crispiness. Approximately 15 minutes.
