Serves: 1 cup Prep: 2 minutes Bake: 50 minutes Ingredients: 2 tbsp Olive Oil, divided 1 cup Pumpkin Seeds, dried 3 tsp Sugar 1/2 tsp Cinnamon Directions: Preheat oven to 300 degrees. In a large bowl toss pumpkin seeds with 1 tablespoon of olive oil then evenly place seeds onto a cookie sheet (trying not to overlap) and into the oven for 30 minutes. Take out of oven and place back into large bowl and toss with 1 tablespoon olive oil, sugar and cinnamon. Evenly place seeds back onto the cookie sheet and bake for an additional 20 minutes. Enjoy!
