Celebrate this Christmas with Lois’ (Grandpa Luken’s sister) Chocolate Roll. This festive snow white treat has been long enjoyed in our family over the Christmas years.
Serves: 10 pieces

Chill: 1 hour
Ingredients:
4 oz German Sweet Chocolate
2 Tbsp Butter
1 Egg, beaten
1 cup Powdered Sugar
2 cups Mini Marshmallows
3/4 cup Coconut or Toffee
Directions:
In a bowl add in the chocolate and butter. Melt in the microwave in 30 seconds increments until chocolate is melted, about 1 minute and 30 seconds. (Be sure to stir after every 30 seconds.)In a separate bowl stir together the egg and powdered sugar. Slowly add in the melted chocolate with the egg and sugar mixture. Make sure to continue to stir while adding in the chocolate so the eggs do not curdle.
Then add in the mini marshmallows and stir to combine.Pour chocolate and marshmallow mixture onto a sheet of aluminum foil and form into a log. Then roll the log in coconut or toffee to coat.
Wrap the aluminum foil around the chocolate roll and place in the freezer for 1 hour. Keep in the refrigerator until ready to serve. Slice into 1 inch pieces, serve and enjoy!
