Chicken salads can get a little bland in flavor and color. Try this new twist that is full of fresh vegetables, the sweet taste of grilled pineapple and the light flavor of Greek Yogurt.

Grilled: 4 minutes
Makes: 5 cups
Ingredients:
3 cups Boneless Skinless Chicken Breast, cooked (grilled, rotisserie or poached) and chopped
2 Celery Sticks, chopped
2 Carrots, peeled and chopped
1/2 Red Pepper, seeded and chopped
1/4 Red Onion, chopped
1/4 Pineapple, cored, grilled and chopped
1/4 cup Cashews, toasted
1 cup Greek Yogurt
2 tbsp Extra Virgin Olive Oil
Salt and Pepper, to taste
Fresh Parsley, garnish
Directions:
In a large mixing bowl combine all of the ingredients and gently toss to combine. Serve in a bed of lettuce or serve as a lettuce wrap. Enjoy!
