This salad makes for a quick, easy and very healthy lunch idea. Feel better about indulging in those holiday pies and baked goods after eating this dish.
Serves: 2

Ingredients:
1 Chicken Breast
2 tbsp Olive Oil
2 tbsp Lemon Pepper Seasoning
1 Lemon, zested and juiced (about 1/4 cup juice)
1/2 cup Extra Virgin Olive Oil
1 tsp Salt
1 tsp Pepper
1 Apple, cored and sliced
3 cups Mixed Greens
1/4 cup Dried Cranberries
Directions:
Preheat grill to high.
Drizzle olive oil and sprinkle the lemon pepper seasoning evenly over chicken breast. Place on grill for 4 minutes then turn and grill for another 4 minutes. Place on the top rack and continue to grill for another 5-8 minutes or until chicken reaches an internal temperature of 165 degrees.
While chicken is cooking mix together the vinaigrette by adding the zest of one lemon along with the juice in a large bowl. Then whisk in the extra virgin olive oil and season with salt and pepper, to taste.
Allow the chicken to rest for 5 minutes then slice into pieces. In a large salad bowl add the greens, top with chicken, apple slices, cranberries and drizzle the lemon vinaigrette over top of the entire salad, serve and enjoy!
