Breakfast menus offer some of our most favorite food items including bacon, eggs, pancakes, beignets and list goes on and on. This will be one of your favorite go to dishes especially when your entertaining because it is packed with flavor, it's quick, easy and the young ones will even enjoy.

Serves: 6-8
Ingredients:
1 frozen pie crust, recommended Pillsbury
1 egg white, lightly beaten
4 slices bacon, chopped
5 eggs, lightly beaten
3 scallions, chopped
4 oz mascarpone cheese, room temperature
8 oz gruyere cheese, shredded
1 tsp salt
1 tsp pepper
Directions:
Preheat oven to 400 degrees.Thaw pie crust and then prick the bottom with a fork in several places. Then with a pastry brush, coat the crust with the egg white. Place pie crust onto a baking sheet and place in the oven for 10 minutes. While the pie crust is in the oven, place a skillet over a medium-high heat. Add in the bacon and cook, until it becomes crispy and browned, about 7 minutes. Drain on a paper towel.In a mixing bowl, combine the cooked bacon, eggs, scallions, mascarpone cheese, gruyere cheese, salt and pepper. Mix until smooth. Pour mixture into the cooled pie crust and place back in the oven for 18 minutes or until the top is a golden brown and eggs have set. Cool tart for 10 minutes before cutting into.
