This breakfast burrito couldn't be more simple and not to mention one of the most delicious breakfast's you've had in a long time.
Prep: 5 minutes
Cooks: 10 minutes
Serves: 3
Ingredients:
Non-Stick Cooking Spray
1/4 cup Yellow Onion, chopped
3 Breakfast Sausage Patty (we used turkey sausage)
6 Eggs, beaten
1/2 tsp Salt
1/2 tsp Pepper
3 Tbsp Half-n-Half
1/2 cup Mexican Cheese, shredded
3 Whole Wheat Tortillas
2 Tbsp Cilantro
Directions:
In a large skillet over medium heat spray some non-stick cooking spray into the pan and add in the onions. Cook the onions for 2-3 minutes or until they become slightly translucent, then add in the sausage. Cook for an additional 4-5 minutes or until meat is completely cooked through.
In a large bowl combine the eggs, salt, pepper and half-n-half together and whisk to fully combine.
Once the meat is finished cooking add in the egg mixture to the skillet and turn the heat to medium-low. Continuously stir the eggs until almost firm, about 3 minutes. Last minute add the cheese with the eggs and stir to combine thoroughly.
Warm tortillas into the microwave for 20 seconds. Then evenly spoon the egg mixture over each tortilla and add on the cilantro. Close up the burrito on each side then serve and enjoy.
*Enjoy with sour cream, salsa and/or hot sauce.
