Ingredients:
2 tbsp Butter
1/2 Sweet Onion, thinly sliced
1 Gala Apple, cored and thinly sliced
4 oz Brie, thinly sliced
4 Chicken Breasts, boneless and skinless
3 tsp Poultry Seasoning
Salt and Pepper
2 tbsp Olive Oil
5 oz Chicken Broth
Directions:
Preheat oven to 400 degrees.
In a large sauté pan over medium high heat add in the butter and sweet onions. Sauté until onions become slightly caramelized, about 8 minutes. While onions are cooking cut a horizontal pocket in the chicken breasts and season the inside of the pockets with salt and pepper.
Once the onions are slightly caramelized add in the apples and cook until tender, about 4 minutes.
Stuff the chicken breasts evenly with the onion-apple mixture and brie. Season the outside of the chicken breasts evenly on both sides with poultry seasoning.
In a large skillet over high heat add in olive oil and the stuffed chicken breasts. Cook until browned about 4 minutes, flip and cook for an additional 4 minutes. Pour the chicken broth into the skillet and place the skillet into the oven. Bake the chicken for 25 minutes or until the chicken is no longer pink. Spoon broth over the chicken, serve and enjoy!
